Casserole Thursdays…

Cassarole Thursdays_small

Being in my family means you must love pizza.  Being a mom means I need meals that are quick, easy, and not fast food…like casseroles.  Let’s combine the best of both worlds.

Pizza Casserole:

  • 4 cups of uncooked egg noodles
  • 1 lb ground beef
  • 1 chopped onion
  • 2-4 cloves of minced garlic
  • 2 cups of pepperoni
  • 32 ounces of pizza sauce
  • 8 tablespoons of milk
  • 2 cups of mozzarella
  1. Preheat your oven to 350
  2. Cook the egg noodles according to bag directions
  3. Brown you meat if you haven’t done it like I have.  Put in skillet with garlic and onions
  4. Stir in noodles, pizza sauce, milk, and half of your cheese
  5. Pour into casserole dish(es)
  6. Bake for 20 minutes
  7. Top with the rest of the cheese and bake an additional 5-10 minutes.

TIPS:

  • Try sausage instead of ground beef. 
  • Add green peppers if they don’t give you heartburn like the do me.

Not sure if you see a trend to my cooking, but as always, this is a double recipe because I won’t do this much preparation to make only one meal.  The allows for us to eat a nice sized meal and save the rest, split in three, for future meals.  Call me lazy but I call it prepared.  This way the hubby can make dinner sometimes because he can at least use a microwave.
